Synopsis: Today we hosted a breakfast event for 50-60 people, and our team was in charge of Potatoes Lyonnaise. Here’s a handy tip if you ever need to make a lot of home fries, hash browns, or anything with cut potatoes – cut or shred them and then boil them until halfway done. Then you can store them in the fridge until you need them, with no fear of the potatoes turning brown. And the best part is, you don’t have to wait nearly as long for them to be done!
So, what’s the difference between the quaint little home fries and the puffed-up Potatoes Lyonnaise? An onion. That’s it. Anti-climax? I think so. But seriously, Potatoes Lyonnaise is home fries with sliced onion. Either way, it’s simple, tasty, and good for just about any meal.
Recipe: Potatoes Lyonnaise
- Potatoes, sliced (thick chips)
- Onions, sliced
- Butter
- Salt, white pepper
This recipe is a lot easier if you boil the potatoes first until they are about half done. Saute the onions in butter until tender and set aside. Now fry the potatoes in butter or oil and flip when they get a nice golden brown on the bottom. Season with salt and pepper. When they’re done on either side, add the sauteed onions and mix together. That’s it! I told you it was simple.
